Melons


Aside from simply serving a seeded section as a special way to start the day, consider making this simple yet elegant dessert. Select 2 or 3 different color melons- maybe Sharlyn, Cantelope, and Honeydew. Wash melons in warm soapy water, rinse, dry, halve, seed, and scoop out with a melon baller. If you don’t have one, melon ballers are available in most kitchen supply departments/stores. Mix the melon balls in a bowl with a spritz of fresh lemon juice, and add some sugar or honey according to taste. Optionally, add some thinly sliced fresh mint leaves to amp up flavor, and/or fresh blueberries to pack in more color punch.

For a refreshing summer salsa to serve alongside pork or seafood, dice peeled melon of choice, add to an equal amount of diced cucumber, and toss with chopped cilantro and shallot or green onion to taste. Dress with a touch of olive oil, and a sweet vinegar such as white balsamic, or lime juice. Season with salt and pepper to taste, fresh chilies optional.
