One of my very favorite recipes is to halve medium size tomatoes and place them in an oiled muffin tin. Season with salt and pepper. Mix freshly grated hard cheese and bread crumbs in equal proportion, and place 2-3 heaping tablespoons of this mixture on top of each tomato. Drizzle with olive oil, and bake at 350 for 10-12 minutes. Broil for a few minutes to brown tops. Serve with fresh basil leaves on top, with a final bit of olive oil. YUM!

Late summer is when tomatoes are finally flavor-packed from many, many days of dedicated sunbathing. Each orb exudes amazing tomato taste if left to ripen to perfection. If you’re not picking them out of your own garden, go visit your local Farmer’s Market and have at the good stuff.
