Grapes


If you’ve never tried making focaccia, a flat bread, now is a good time to have at it. Just find a good recipe in any baking cookbook, or on line, and after the dough is in the pan and ready for baking, place a cupful of grapes on the surface along with some fresh rosemary sprigs, a drizzle of honey and a few tablespoons of olive oil. It really is fairly simple and fast, and the results are delicious.

For those of you with an ice cream maker, how about some Concord grape sorbet? Place washed, stemmed grapes in a saucepan with ¼ inch water at the bottom, cook at medium high for about 15 minutes, mashing the mix up to release the juice. Cool, press through food mill and then through a fine mesh sieve to remove skin and seeds. For each cup of juice add 3 tablespoons sugar, warm and stir to dissolve. Chill overnight and freeze according to directions for your ice cream freezer. This is an amazing sorbet, packing major flavor- well worth the effort.
